A boot slides over an RJ45 plug's body and latch, protecting the latch tab from snapping when the cable is pulled or scrapes against panel edges -- color-coding the two ends of a run (grey and blue here) lets a technician trace a specific cable through a large bundle without following its entire length by hand.
